Asparagus, The Wonder Vegetable

Asparagus, a seasonal vegetable and available in three different colors white, purple and green, is a leafless member of the Lily family. The bud-like compact heads appears like a crown over the tall and slender stem with fleshy spears. It is sought for its succulent taste and tender texture. It is called as Shatwar Musli or Shatmuli in Hindi

Asparagus is also very low in sodium and has calcium and magnesium in the ideal ratio of 2:1. The phyto-nutrients along with the highly dense nutritional profile of asparagus have a number of health benefits.

  • Alkaline nature: It helps cleanse the tissues and muscles of waste and is safe for patients with gout.
  • Anti-inflammatory agent: Helps relieve arthritis and rheumatism.
  • Cancer and cataract: Contains, anti-oxidant and glutathione that can help prevent cancer and cataract and progression of other eye problems.
  • Diabetes/Hypoglycemia:  The different profile of minerals in asparagus helps in the control of blood sugar but people with advanced kidney disease should avoid.
  • Heart Health: Folic acid or Folate (along with vitamins B6 and B12) is essential for maintaining a control on the Homocystiene level for cardiac health. One serving of asparagus supplies 66% of daily requirement. A daily intake of 400 mcg of folate reverses elevated homocysteine levels and thereby reducing number of heart attacks.
  • May help prevent birth defects; a serving of Asparagus will do wonders for pregnant women as this is the period when extra amounts of Folic acid are recommended. Inadequate folate during pregnancy has been linked to several birth defects, including neural tube defects like `spina bifida' as the fetus' nervous system cells do not divide properly
  • A Diuretic - Asparagus has very good amounts of potassium (288 mg per cup), quite low in sodium (19.8 mg per cup) and combined with good mineral profile especially magnesium has a diuretic effect. It has been found to be beneficial in the treatment of arthritis, rheumatism and PMS-related water retention. The unpleasant part is that for some people there is a distinct urinary odor after consuming asparagus.
  • Healthy Gut - A carbohydrate in it called Inulin promotes healthy micro flora in out gut (large intestine) similar to lactobacilli and bifid bacteria, but is not digestible by man. The collective activity of good bacteria acts as a good line of defense in our gut against disease bacteria. It prevents constipation by helping regular bowel movement.
  • Fights hangover: The amino acids and minerals found in asparagus extract may alleviate alcohol hangover and protect liver cells against toxins, according to a study in the Journal of Food Science, published by the Institute of Food Technologists.

Buying and cooking: Choose asparagus which have straight, firm stalks with tight tips.  Always eat them fresh but if they have to be stored; they should be kept dry -tightly wrapped in a plastic bag for a max of three days in the refrigerator.
While cooking, always lightly steam, rather than boil, to preserve the sodium and other minerals from boiling away and avoid cooking asparagus in iron pots as the tannins in the asparagus can react with the iron and cause the stalks to become discolored.

Delectable dishes with Asparagus:
•    For a scrumptious appetizer grill asparagus along with other vegetables such as beets and mushrooms.
•    Steamed asparagus served with light lemon vinaigrette makes a refreshing salad.
•    Toss freshly cooked pasta with asparagus, olive oil and pasta spices such as thyme, tarragon and rosemary.
•    Chopped asparagus make a flavorful and colorful addition to omelets. And if sautéed with garlic, shiitake mushrooms and tofu or chicken they make a healthy snack.

Saravanan Dear Madam,

I'm suffering from Ulcerative colitis which is really threatening my life(both professional and personal). I'm really struggling to find what is triggering the disease as I always eat healthy veg - carrots(raw and cooked), Beetroot, Cabbage, Mushroom, Snake gourd, Ridge gourd, Plaintain Pith etc... Lots of fruits(Papaya, Banana, Apple) as well.
Please can you suggest me a diet to manage this disease. Your advice is really really appreciated.

As far as my knowledge goes Asparagus in Chennai is available
- in pazhamudhir cholai in mahatma ghandi road adayar shastrinagar
- in AMMA NANNA, Alwarpet (Opp to Hotel Adyar Park Sheraton)
I hope you are able to lay your hands on it now as it is a spring season vegetable .
In India, Asparagus known as Shatwar, Sootmooli, Musli in Hindi,(Latin name, Asparagus adscendens) is mainly grown in the western Himalayas and Himachal Pradesh regions.The farmers of Nashik (Maharashtra)are also trying to take up large scale cultivation of the same like they did with Strawberries, in which case very soon we will have plentiful supply.

Vijayalakshmi Hi Pavitra, truly glad we could influence you on the merit of consuming Asparagus for better health. A study group in Uk has found that asparagus consumption could improve sensitivity to insulin apart from contributing a good amount of magnesium and anti oxidants all which help in managing Diabetes.So get creative with making many dishes with asparagus and share it with our other readers too :).
