Fish In Lemon Almond Crunch
Fish is an excellent source of protein, omega 3 fatty acids and fat soluble vitamins. Almonds are crunchy and provide a perfect foil to the soft texture of the fish. Almonds are also a source of monounsaturated (good) fats and vitamin E. Canola oil, used here is another source of heart healthy monounsaturated fats. Thus, this recipe though not low in fat, is an excellent addition to any meal when balanced with low fat, fiber rich options such as a side of whole wheat bread or brown rice and a portion of steamed vegetables.
