A recent research by The University of California, Davis and the National Center for Food Safety and Technology, Illinois Institute of Technology, recently conducted a study to gain a better understanding of the role of potatoes because they are generally considered to be high glycemic index foods which should not be included in a weight loss regimen. The results were presented at the Obesity Society's 28th Annual Scientific Meeting October 8-12, 2010.
86 overweight men and women who were randomly assigned to three groups were followed for a period of 12 weeks to assess the effects of a reduced-calorie modified glycaemic index diet, which included potatoes.
